What is E440?

Pectin is a heteropolysaccharide, a structural polymer contained in the cell walls and middle lamellae of terrestrial plants. The principal chemical component of pectin is galacturonic acid. E440 sits in the E400–E499 series, which in the EU classification mainly covers thickeners, stabilisers and emulsifiers.
