What is E1204?
Pullulan is a polysaccharide consisting of maltotriose units, also known as α-1,4- ;α-1,6-glucan'. Three glucose units in maltotriose are connected by an α-1,4 glycosidic bond, whereas consecutive maltotriose units are connected to each other by an α-1,6 glycosidic bond. E1204 sits in the E1000–E1599 series, which in the EU classification mainly covers other additives, incl. modified starches.
What is E1204 used for?
E1204 belongs to the thickeners group. Thickeners and gelling agents give food texture and body. Many come from plants, like pectin and guar gum.
