What is E249?
Potassium nitrite (distinct from potassium nitrate) is the inorganic compound with the chemical formula KNO2. It is an ionic salt of potassium ions K+ and nitrite ions NO2−, which forms a white or slightly yellow, hygroscopic crystalline powder that is soluble in water. E249 sits in the E200–E299 series, which in the EU classification mainly covers preservatives.
What is E249 used for?
E249 belongs to the preservatives group. Preservatives stop food from spoiling by slowing bacteria, mould and yeast. Most are safe, though some people limit certain ones.
