What is E312?

Dodecyl gallate, or lauryl gallate, is the ester of dodecanol and gallic acid. As a food additive it is used under the E number E312 as an antioxidant and preservative. E312 sits in the E300–E399 series, which in the EU classification mainly covers antioxidants and acidity regulators.
